Mrs Keefe's Toblerone Treat

So I guess it would be remiss of me not to start this blog with a special tribute to Mrs Keefe - the Mother of our grade at school, the person who taught me that hospitality can change people, the one whose parties, dinners or casual events, I and all who were invited would cancel plans for, the person who I have single-handedly watched and said to myself 'I would love to be like her.'

So naturally, this recipe came from her and appeared at many get togethers as the prized dessert. It was Mrs Keefe's toblerone cheesecake that we would all be overly vocal about - almost in a gesture of matching her extravagant love with extravagant applause.

So, for all those who would like to meet Mrs Keefe, you can start your journey of hospitality here by sharing a seat with her at a table with felicity over the much-anticipated Toblerone Cheesecake:)

Ingredients:
3 cups Choc Ripple biscuits, crushed 
1 cup melted butter
2 x 250g cream cheese, at room temperature
3 tsp gelatine, dissolved in 1/2 cup of boiling water
3/4 cup caster sugar
100g Toblerone, melted
1/2 cup cream
1 punnet of strawberries and a handful of blueberries

Method:
1. Mix biscuit crumbs and butter and press into the base of a lined (base only) 20cm springform pan. Press the mixture against the walls of the pan. Chilling for a few minutes in fridge during this can sometimes help the mixture stick to the walls.
2. Chill in fridge until cheesecake mixture is ready
3. Beat cream cheese with electric mixer until soft.
4. Add gelatine mixture, caster sugar, melted toblerone* and cream. Blend until smooth.
5. Pour into chilled pan and chill in fridge for 3hrs or overnight.
6. Thinly slice enough strawberries to garnish cheesecake, lining the blunt edge of the sliced strawberries against the walls, as seen in photo. Thinly slice one strawberry without cutting through the tip and splay out and place in the centre of the cake. Pile a few blueberries next to the splayed strawberry and shave some chocolate on top.

*Melt Toblerone by placing a heatproof glass bowl over a saucepan of boiling water. Place the Toblerone into the bowl and mix until melted. Take off heat and blend with other ingredients as directed.
