Hummus of the Llewelyn house

It was 2011 and I was in a rut. I was in a pretty bad way ever since I broke up with what I thought was the love of my life a few years earlier and couldn't seem to regain my resolve.

An old school friend, Francesca, who had similarly gone through her own heartache, suggested that we move out at a mutual friend's engagement party. Up until that point, I had never considered moving out but for marriage so I entertained the idea little. However I had now hit my mid-twenties and was living with my Mum in a geographically isolated suburb of Sydney with a mediocre job and no sense of direction. Propelled by my sister's advice, I decided to throw myself in and within two weeks, Francesca, Rob and I were sitting over coffee at Pablo and Rusty's feeling a rush of excitement about the opportunities that now lay at our door.

Sometimes we only appreciate the gravity of our decisions in retrospect and for me, moving out with Francesca and Rob was life changing. We had all come from pretty difficult seasons and living together was a healing balm for all of us. For me, the sense of community was so dignifying. No longer did I have to organise every single social thing I did - I could just come home and find a group of people sitting on the lounge room floor, or I'd come home from work and join Rob or Chez on the couch to watch an episode of MasterChef or Farmer Wants a Wife. A sense of ease came into my life that I hadn't felt for a really long time.

A favourite activity for us was to have flatty dinner every Wednesday night and invite guests to join us every other week. Rob and Chez were both familiar experts in hospitality and those nights had a magic to them, like instruments coming together in perfect harmony. Chez is undoubtedly one of the most natural cooks I know and can whip anything together whilst being really cost efficient. Rob is like oil to an engine in creating a welcoming environment. He is still the most skilled conversationalist I know and can instantaneously put a guest at perfect ease, with drink in hand. For me, I have always loved setting the scene - ambient light, beautiful cheese boards, linen tablecloths - they are my jam and I'd love knowing that we were all at ease giving in the way we best knew how.

I'm not sure if one dinner party transpired without Francesca's hummus playing a pivotal role somewhere in the night. If smell evokes memory, then chickpeas and garlic will forever speak to me of the many beautiful moments we've shared in the Llewelyn household.


Ingredients:
2 cans of chickpeas (drained, keeping 1/4 cup liquid)
3 garlic cloves, crushed
100mL olive oil
1 tsp ground cumin
1 lemon, juiced
60mL water/chickpea liquid

Method:
Place all ingredients but water into a processor. Mix, gradually adding water or chickpea liquid, until you reach a smooth consistency.
