Liss's Banana Bread


So yes, Liss is me - by those who know me well.

I guess my affair with banana bread started way back in Year 11, when my driver's licence was fresh and I could escape both school and the monotony of glad-wrapped lunches for 45 minutes with a luxurious Chai and hot toasted banana bread at Gloria Jeans. Then around the same time, our amazing carer (remember, Modern Family), introduced the simplest and yummiest banana bread recipe ever.

And to be honest, I don't really enjoy eating things that I know aren't healthy for me - consider that a tribute to my Mother who reared me on BarleyGreen and Echinacea. I still to this day can't drown out the voice of my Mum's doctor that would evangelise the fact that 'Sugar is poison to your body' - so whenever I pour sugar into any recipe, I feel like I am wilfully destroying my body, regardless of how saturated that statement was in scare tactic. Apparently sugar is also, with the sun, amongst the greatest ageing agents. Take that as a scare tactic;)

So regardless of where you stand on the health spectrum, this recipe is a winner for both taste and health.

Ingredients:
4 over-ripe bananas, mashed
2 cups s/r flour
3/4 cup honey
2 1/2 tbsp oil (coconut/macadamia/vegetable)
3 egg whites, beaten
1/4 cup coarsely ground walnuts
Extra walnuts

Method: 
  1. Pre-heat oven to 180C and lightly grease loaf tin.
  2. Mash banana.
  3. Beat egg whites lightly.
  4. Whisk honey, oil and eggs together.
  5. Add to mashed banana.
  6. Gradually sift in flour. Add walnuts. Stir to combine.
  7. Pour mixture into tin and top with a line of walnuts.
  8. Bake for 1hr 15minutes or until skewer comes out dry.
  9. Let loaf sit in turned off oven to avoid sinking.
