Talitha's Breakfast Bean Mix

This recipe needs to be attributed to my beautiful flatmate, Talitha, or T as I affectionally call her. (Not sure how affectionate a letter of the alphabet is, but it's said in love!)

Talitha is such a pure delight to live with and always has been. The moment she walked into Llewellyn she was like a river of water that was filled with purity and joy in every drop. We have all been so blessed by her - her passion for women and her corresponding action (the part that inspires me the most), her incredible gift at cooking, her laugh, her glow and her beauty that touches everything in the house like that girl from FernGully who causes flowers to bloom in her wake as she glides across the earth.

You are such a joy and my biggest encouragement to you is that God has placed everything inside you that you need to flourish. You have the wisdom and discernment inside you - I have full trust in your ability to look at the path in front of you and decide the good and right path to tread. xx

Fast forward four years and I watched Talitha get married two months ago to her Norwegian Viking. As we arrived, they served us up one of my favourite breakfast experiences to date; Torstein's Norwegian bread (on blog), Gunnar's Granola (on blog) and eggs with this bean mix. What a way to say 'see ya later' to 30 hours of plane food.




Ingredients
2 onions, diced
3 garlic cloves, finely chopped
6 coriander stems, finely chopped
2 x cans of kidney beans
1 x can of black beans
1 x can of cannellini beans, rinsed
1 x packet taco mix (Old El Paso)
2 x cans peeled tomatoes
2 tsp sugar

Method:
1. Cook onions and garlic cloves in large frypan/saucepan
2. Add coriander stems
3. Add beans and taco mixture and mix thoroughly
4. Add peeled tomatoes and sugar and cook for roughly 20-30minutes until tomatoes are well cooked and tasty!
