Catherine's Bliss Balls

Rob, Francesca and myself spent the duration of our time together as flatmates single. Since then, we have enjoyed the immense pleasure of witnessing one another get married to our respective partners.
Rob met his wife Carmen at Vine church in Surry Hills and got married in the summer of 2016. Their wedding was held at a guesthouse in Interlaken, Tasmania which had been in the Lincolne family for generations but had since become derelict. Rob and his family had wanted to restore the elegant 11 bedroom guesthouse for years and his wedding presented the perfect impetus to make it happen.
We had the joy of traveling to Interlaken with a group of friends two months before the wedding to accelerate the transformation of this weathered guesthouse into a wedding venue.
I spent the entire time with what looked like a very hot hairdryer in one hand and a paint scraper in the other removing the stubborn lead paint from the weatherboard panels on the house exterior. Even after dedicating three days and four people to this task, we left only having completed one half of one side of the house. I left feeling equal parts guilty and embarrassed at the monumental task we left in the hands of the family a mere eight weeks out from the wedding and my romance with renovating quickly tempered to a more realistic understanding of the toll it can take on energy, time and finance.
Throughout this weekend, we spent a lot of time with Rob's uncle and his family who lived locally and were steering the project. Rob's cousin, Catherine, was in the early planning stages of opening her own cafe and it was her signature dishes that we were treated to the weekend through. Sensing that we were fading by the minute at each of our tasks, Catherine brought around these bliss balls which were absolutely delicious and at the time a melodramatic godsend. These no doubt now grace the counter of 'The Workshop Cafe' proudly ran by Catherine in Port Sorrell, Tasmania.



Ingredients:
1 cup, pitted medjool dates
3/4 cup, roasted almonds
1-2 tbsp, cacao
shredded coconut

Method:
  1. Put all ingredients except coconut in Thermomix and mix for 12 sec / speed 7.
  2. Empty into another bowl and make small balls of mixture.
  3. Roll balls in shredded coconut.
  4. Refrigerate and serve.
