Green beans with Almond and Parsley Picada




Ingredients:
500g fresh green beans, tips trimmed

Picada:
100mL olive oil
100g blanched almonds, roasted for 5 minutes, roughly chopped
3 cloves garlic, finely chopped
2 lemons, finely zested
1 lemon, juiced
1 bunch flat leaf parsley, roughly chopped
1 tsp sea salt
1/2 tsp black pepper

Method:
1. Combine all picada ingredients in a bowl and set aside.
2. Cook beans in a large saucepan of salted water for 2-3 minutes or until just tender.
3. Place beans immediately under cold water.
4. Place beans on dish and place picada topping on top.

Serves 6
