Pulled Beef and Vegetarian Mexi-Feast
SLOW COOKED PULLED BEEF:
Serves 2
Ingredients:
1 brown onion
20g oil
350g chuck steak, cut into pieces (2cm)
2 tsp Mexican spice mix
1 tsp stock paste
110g water
4 medjool dates, pitted
1 tsp peanut butter
Mexican spice mix:
1 tsp cayenne pepper
12 small dried chillies
2 tbsp cumin seeds
4 tbsp dried oregano
2 tbsp smoked paprika
2 tbsp sweet paprika
4 dried bay leaves
2 tbsp granulated garlic
2 tbsp ground cinnamon
Method:
- Place all Mexican spice ingredients into mixing bowl and dry roast 5min/Varoma/speed 1. Allow to cool slightly, then mill 30 sec/speed 10.
- Place onion and oil into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl with spatula, then cook 2min/100C/speed 1.
- Add all remaining ingredients, except peanut butter, and cook 60min/100C/reverse/speed 1, placing simmering basket instead of measuring cup onto mixing bowl lid.
- Add peanut butter and blend 3 sec/speed 5.
- Serve
VEGETARIAN MIX
Serves 6
Ingredients:
1 tsbp olive oil
1 medium brown onion (150g), chopped coarsely
1 clove garlic, crushed
1 thai red chilli, seeded, chopped finely
2 medium tomatoes (380g), chopped finely
2 tbsp tomato paste
1 tbsp taco seasoning (or Mexican spice mix)
1 cup (250g) vegetarian refried beans
420g can red kidney beans, drained and rinsed
2 tbsp fresh coriander, coarsely chopped
Method:
- Heat oil in medium saucepan; cook brown onion, garlic and chilli, stirring until onion is soft.
- Stir in tomato, tomato paste and seasoning; simmer uncovered for 10 minutes.
- Add refried beans and kidney beans; simmer for about 5 minutes or until hot. Stir in coriander.
- Serve!
SALSA
Serves 4
Ingredients:
1 medium tomato (190g), chopped finely
1 small red onion (100g), chopped finely
1 tbsp fresh coriander, coarsely chopped
1 tbsp lime juice
1 tsp sugar
Method:
- Combine ingredients in bowl; mix well.
GUACAMOLE
Ingredients:
Avocado
Lime juice
Paprika
Sweet Chilli Sauce
Sour cream/Egg Mayo/Yoghurt
Garlic, crushed
Coriander
Salt + Pepper
Method:
- Mash avocado in medium bowl; add remaining ingredients to taste.
