Pam's Macadamia, White Chocolate Cookies
Ingredients:
125g butter
2 tsp vanilla essence
1 cup brown sugar, firmly packed
1 egg
1 cup plain flour
1/2 cup self-raising flour
150g chopped, unsalted, roasted macadamia nuts
1 cup (70g) shredded coconut
3/4 cup rolled oats
200g white chocolate, chopped
Method:
1. Beat butter, essence, sugar and egg in small bowl with electric mixer until light and fluffy. Transfer mixture to large bowl.
2. Stir in sifted flours, nuts, coconut, oats and chocolate.
3. Shape level teaspoons of mixture into balls, place about 3cm apart on greased oven trays, flatten slightly.
4. Bake in moderately hot oven for about 12 minutes or until lightly browned; cook cookies on tray.
