Gunnar's Granola

Ingredients:
Group 1:
800g oats
100g sunflower seeds
100g flaxseed/linseeds
100g pumpkin seeds/pepitas
100g almonds
100g walnuts
100g cashews
100g peanuts
4 tbsp honey
4 tbsp coconut oil
4 tbsp water
2 tbsp brown sugar
1.5tbsp cinnamon
1 tbsp vanilla bean powder

Group 2:
Puffed rice
Shredded coconut

Method:
1. Combine honey, coconut oil and water in a small saucepan on low heat. Mix gently.
2. Combine all ingredients in Group 1 in large mixing bowl and mix well.
3. Lay on large tray lined with aluminium foil and bake for 20minutes at 180°C, turning every 5minutes.
4. With 5 minutes remaining, add Group 2 and mix well.
