Torstein's Norwegian Bread

Ingredients:
500g spelt/flour (80/20)
250g oats
125g oatbran
1/2 tsp dried yeast
good pinch salt
1/3 cup sunflower seeds
1/3 cup linseeds
1/3 cup pepitas
1 heaped tbsp honey
800mL water

Method:
1. Stir all ingredients until well combined.
2. Sit for 12-20 hours and cover with a tea towel.
3. Preheat oven to 200°C. Place cast iron loaf tin with lid inside preheated oven for 20minutes.
4. Remove and place bread mixture into pot.
5. Bake for 50 minutes.
6. Remove lid and continue cooking for 20 minutes.
