Carrot Loaf



Ingredients:
3 large (500g) carrots, grated
3 eggs
2 tsp vanilla extract
2 tsp cinnamon
150g almond meal
150g plain wholemeal flour
1/4 cup macadamia oil
1/4 cup honey
1 cup raisins
2 tsp baking powder

Method:
1. Preheat oven to 150°C
2. Mix wet and dry ingredients separately and combine all ingredients in large mixing bowl.
3. Pour into loaf pan.
4. Bake for 60-90 minutes in oven. Cover with foil if desired.
5. Serve with natural yoghurt and honey if desired.
