Beef Burgers



After knocking these together one Sunday evening, I'm picturing these as an ideal Sunday night ritual whether it be just with family or with a host of last minute friends dropping in for a feed after church. It's so easy to upscale to feed 8-10 or keep simple with 3-4 and you won't resent the extra mouths to feed even after they keep coming back as it's cheap, easy to make and generally goes down pretty well with the masses.

Beef Patties:
50g fresh breadcrumbs
2 tbsp milk
500g beef mince
150g (x1) brown onion, coarsely grated
2 tbsp chopped flat-leaf parsley
2 tbsp tomato sauce
1 tbsp worcestershire sauce

2 tbsp olive oil
1 large brown onion, sliced
4 burger buns
4 slices cheddar cheese
4 iceberg lettuce leaves
2 small ripe tomatoes
225g can sliced beetroot
Tin of sliced pineapple
Avocado
Bacon rashers
mayonnaise
bbq/tomato sauce/mustard

Method:
1. Beef patties: Place breadcrumbs in a medium bowl; pour milk over. Add mince, grated onion, parsley and sauces. Season with salt and pepper. Use your hands to mix until well combined.
2. Divide the mixture into even portions and shape each portion into a patty about 10cm in diameter and 2cm thick. Refrigerate if desired to firm up.
3. Heat 1 tbsp of olive oil in small saucepan and cook sliced onions until caramelised, stirring occasionally.
4. Heat 1 tbsp olive oil in large non-stick frypan over medium heat until hot and add beef patties, cooking for 5minutes each side or until just cooked through. Place a single layer of cheese on the patties 2minutes before removing from pan.
5. Meanwhile, preheat grill on high and place buns under grill for 1-2 minutes each side.
6. Place ingredients on buns and enjoy yummy beef burgers!
