Breakfast Bars (Thermomix)



The quality and taste of these breakfast bars were such a welcome surprise. The drizzle of melted Lindt chocolate on top is also a must as it just adds an 'X factor' which makes you come back for more. I also happened upon a whole foods store which sold all of these ingredients in big buckets which I could weigh to the exact gram instead of having to buy a packet of each which saved a lot of money.

Ingredients:
30g dried apricots
30g dried figs, cut into halves
30g pitted medjool dates
40g walnuts
40g raw cashew nuts
40g raw macadamia nuts
250g raw almonds
3 eggs
60g (3tbsp) honey
1 tbsp apple juice
70g shredded coconut
40g dried cranberries
40g sunflower seeds
40g sesame seeds
40g pepitas
100g Lindt dark chocolate

Method:
1. Preheat oven to 160ºC. Line a slice tin (18cm x 30cm) with baking paper.
2. Place apricots, figs, dates, walnuts, cashews and macadamia nuts into mixing bowl and chop 1 sec/10 x 3 times. Transfer into a bowl and set aside.
3. Place almonds into mixing bowl and mill 10sec/speed 9.
4. Add eggs, honey and apple juice and mix 4 sec/speed 4. Scrape down sides of mixing bowl with spatula.
5. Add all remaining ingredients, including reserved fruit and nut mixture and combine 20 sec/reverse/speed 3. Mix well with spatula until fully combined.
6. Spread into prepared slice tin and flatten out mixture evenly with your hands. Bake for 25-30minutes at 160ºC or until golden.
7. While still warm, cut into 12 rectangular bars, then transfer onto a wire rack to cool completely before serving.
8. Place chocolate into mixing bowl and melt 3-4min/50ºC/speed 1 or until fully melted. Drizzle over breakfast bars and sprinkle with extra coconut if desired. Refrigerate until set and store in airtight container on bench.
