Marie's Carrot Cake



Ingredients:
3 cups grated carrot
4 eggs
1 cup of sugar
1 cup oil
1 cup chopped walnuts
2 tsp bicarbonate soda
2 (or more) cups of plain flour
1 tsp cinnamon
1 tsp vanilla

Cream Cheese:
125g packet cream cheese
60g butter
1 tsp vanilla
1 cup of icing sugar

Method:
Combine carrots, eggs, sugar and oil. Beat well until mixed.
Add remaining ingredients and beat well.
Pour batter into greased and lined loaf tray.
Bake at 180C for approximately one hour or until skewer inserted into the middle comes out dry.

Cream Cheese:
Beat cream cheese and butter together until smooth. Add vanilla and icing sugar and mix well until combined. Spread onto sliced carrot cake if desired.
