Coconut Macarons
Ingredients:
200g coconut flakes (or shredded coconut)
just under 1/2 cup sweetened condensed coconut milk (or regular sweetened condensed milk)

just under 1/2 cup sweetened condensed coconut milk (or regular sweetened condensed milk)
1/2 teaspoon vanilla bean powder
1 large egg white
1/8 teaspoon salt
dark chocolate, melted

dark chocolate, melted
Method:
1. Mix coconut flakes, sweetened condensed coconut milk and vanilla bean powder together.
2. Beat egg white and salt with electric mixer until stiff peaks form. Fold into coconut mixture.
3. Form small mountain peaks onto lined baking tray and bake for 25 minutes at 160 degrees.
4. Remove from oven when base is dark golden and peaks are lightly golden. Leave for 5min in tray and cool completely on wire rack.
5. Melt dark chocolate and dip bottoms of coconut macarons in melted chocolate. Return to lined baking tray and refrigerate for 10minutes.
Enjoy your little heart out, these are damn fine.
