English Crumpets

 



Ingredients:
100g plain all-purpose flour
50g wholemeal flour
200mL water at 40C
1/2tsp salt
1/2tsp sugar
1 tsp baking powder
1tsp yeast
1tbsp warm water
2tbsp unsalted butter (cooking)

Method:
1. Place flour, water and salt in a bowl and whisk for two minutes.
2. Dissolve yeast into 1tbsp warm water in a small bowl.
3. Add yeast mixture, sugar and baking powder into bowl, then whisk for 30 seconds.
4. Cover with beeswax cloth or clingwrap, then place in a very warm place for 30-60minutes until the surface gets nice and foamy. It will only increase in volume by 10-15%.
5. Melt butter in non-stick frypan and grease the insides of 4 crumpet rings. Brush the base of the pan with the melted butter and place rings in frypan.
6. Turn stove on medium-high (medium for strong stoves) and bring to heat.
7. Pour 1/4 cup batter into the rings about 1cm deep. Cook for 90seconds - bubbles should start appearing on the surface but not popping yet.
8. Turn heat down to medium, cook for 1minute - some bubbles should pop around the edges.
9. Turn heat down to medium-low, cook for a further 2-4minutes, until the surface is dry and it's clear no more bubbles will be popping. Remove rings with tongs, then flip and cook the other side for 20-30 seconds or until golden.
10. Transfer to a wire rack and fully cool. Can be eaten once cool but it's even better the next day. 

To eat, toast in a toaster until base is crispy. Slather generously with butter then spread of choice and devour immediately!
